I made a batch of this apple pie oatmeal this morning for the family and all I can say is yuuumm! This could be eaten anytime of day - so filling and satisfying. 🤗
Pandemic life: We are not going into the grocery stores, due to my youngest son having severe asthma. The grocery pickup times are disappearing quickly so I'm lucky if I get one every few weeks. Thankfully, I was able to snag 10 pounds of oats from Sam's Club online, so we are eating a.lot.of.oats. :) :)
I topped my breakfast today with mixed berries and a chia seed/peanut butter mix I made yesterday, and it was so good!
I hope you are all doing okay and are using this time to care for yourself. Personally, I want to look back on these weeks and be proud of the self care and growth that occurred, obviously in between working and homeschooling 2 children! I'm trying :).

Easy Apple Pie Oats
In a saucepan, combine the following:
2 cups rolled oats
1.5 c plant milk
1 c water
1 tsp vanilla
2 tsp pumpkin pie spice or apple pie spice
1 large chopped apple
2 tbsp maple syrup (if watching sugar you can sub a few maple stevia drops)
1/4 tsp salt
Cook on medium until desired thickness, about 5 min. Top with nuts, chia seeds, nut butter, cacao nibs, and/or unsweetened coconut. This also tastes amazing when eaten cold! Enjoy! 🥣
