Parmesan Cauliflower Fritters



Super customizable and flexible, high in protein, fiber and healthy fats. These can be topped with just about anything - here I used avocado mayo mixed with a little relish and Sriracha. They would also be great with guacamole, a dollop of Greek yogurt, or even hummus! Hope you enjoy.


Ingredients:


1 (12oz) bag frozen cauliflower rice, thawed

2 eggs

1/4 cup grated Parmesan cheese

1 Tbsp ground flaxseed

1 Tbsp flour (all purpose, whole wheat, gluten free, etc.)

1/4 tsp each salt and pepper

Garlic powder, onion powder, or any other seasoning you like!

Olive oil for coating skillet


Directions:


1) Combine all ingredients in a medium bowl, mix very well, and shape into patties (I used about 1/4 cup each).

2) Drizzle about 1 tsp olive oil in a large skillet and heat to medium.

3) Place patties in pan, cover (this is important as it will cook the eggs through), and cook for 3-4 minutes or until golden. Flip, and continue cooking with the lid off for another 3-4 minutes.

4) Serve with sauce of choice.
