Healthy, High Fiber Waffles (gluten/dairy free)
Updated: Jul 21, 2020
High fiber and protein, gluten free, no added sugar, what more could one ask for in a decadent breakfast?! My whole family is loving these waffles for breakfast lately. They can be topped with just about anything - nut butter, syrup, fruit, cottage cheese, jam, etc!
Today I used defrosted frozen mixed berries (mashed with fork) and low sugar syrup - (this is the one I use and recommend to my clients) mmmm! Have a beautiful week, friends!
Healthy High Fiber Waffles
Serves 1, Makes 2-3 waffles
4 Tbsp vanilla plant based protein powder (or use chocolate for dessert like waffles!)
2 Tbsp powdered peanut butter
1/2 tsp baking powder
3 egg whites
2 Tbsp ground flaxseed
2 Tbsp water
Avocado Oil spray
Turn on waffle maker.
Combine protein powder, peanut butter powder, ground flaxseed, and baking powder. Stir to combine.
Add egg whites and water, and mix well with a fork until no lumps remain.
Spray both sides of waffle maker with avocado oil spray. Pour 1/2 of batter in so that each side is 3/4 full. Follow directions for how long to cook (usually 4-5 minutes).
Repeat step 4 with remaining batter.
Enjoy with suggested toppings!
