Healthy, High Fiber Waffles (gluten/dairy free)

High fiber and protein, gluten free, no added sugar, what more could one ask for in a decadent breakfast?! My whole family is loving these waffles for breakfast lately. They can be topped with just about anything - nut butter, syrup, fruit, cottage cheese, jam, etc!


Today I used defrosted frozen mixed berries (mashed with fork) and low sugar syrup - (this is the one I use and recommend to my clients) mmmm! Have a beautiful week, friends!



Healthy High Fiber Waffles


Serves 1, Makes 2-3 waffles


Ingredients:


4 Tbsp vanilla plant based protein powder (or use chocolate for dessert like waffles!)

1/2 tsp baking powder

3 egg whites

2 Tbsp water

Avocado Oil spray


Directions:

  1. Turn on waffle maker.

  2. Combine protein powder, peanut butter powder, ground flaxseed, and baking powder. Stir to combine.

  3. Add egg whites and water, and mix well with a fork until no lumps remain.

  4. Spray both sides of waffle maker with avocado oil spray. Pour 1/2 of batter in so that each side is 3/4 full. Follow directions for how long to cook (usually 4-5 minutes).

  5. Repeat step 4 with remaining batter.

  6. Enjoy with suggested toppings!
