Gingerbread Protein Pancakes
Makes 1 serving
¼ cup quick oats
½ of a medium banana
1 tsp molasses, divided
¼ tsp ground ginger
¼ tsp cinnamon
½ tsp baking powder
1 tsp vanilla extract
Combine all ingredients in a blender. Puree until well mixed. Add 1-2 tbsp water for thinner batter.
Heat a nonstick skillet to medium high and spray with an oil spray.
Drop batter into heated pan in medium sized circles. Cook 2-3 minutes or until edges are crisp; flip and cook for 1-2 minutes more.
Top with remaining ½ tsp molasses, additional cinnamon, and sliced banana if desired.

Can sub applesauce in place of the banana, and maple syrup in place of the molasses! Can also use egg whites or 1 flax egg (1 Tbsp ground flax plus 3 Tbps water) in place of the whole egg.
